How cool is this? The University of California at Berkeley has just become the first college campus to provide students with certified organic dining options--every day. Now, I know it's Berkeley and I know it's California with all that good weather (well except for the 42 days of straight rain they are having). But come on! We can do this too. If a public institution like Cal Berkeley can pull this off, then Syracuse University or SUNY-ESF (the State University of New York College of Enviornmental Science and Forestry) can surely pull it off--even if in a small way. We--students, faculty, staff and others--just have to want it badly enough.

This is really a wonderful way for college students to eat. UC Berkeley also uses trans fat free cooking oil which is so important. All along the west coast colleges are moving towards healthy food preperation which is truly an education in itself.
